Carolina Gold Sushi Rice

1 cup (7 ounces) Carolina Gold Rice, unrinsed
2 tablespoons rice wine vinegar
1 tablespoon sugar
1/2 teaspoon fine sea salt
Directions
1. Combine rice and 1 cup plus 2 tablespoons water in a 2-quart saucepan or 8-cup rice cooker. If you are using a saucepan, cover and bring to a simmer over medium heat. Reduce heat to low and simmer gently until water is absorbed and rice is tender, about 15 minutes. Turn off heat, wrap lid in a clean kitchen towel, replace lid, and let saucepan rest on hot burner for 10 minutes. If you are using a rice cooker, cover and cook until light goes on. Rest rice for 10 minutes.
2. While rice is cooking, combine vinegar, sugar and salt in a small warming pan and heat to dissolve. Cool to room temperature.
3. Spread hot rice in a shallow baking dish or casserole and fan it with folded newspaper. Sprinkle vinegar mixture over hot rice and fold it gently with a plastic bench scraper or a flat wooden spoon. Turn rice into a bowl and cover it with a damp cloth until ready to use.
Makes 3 cups.
